Genuine Aleppo soap is more than „olive-oil soap with laurel fragrance“. Behind a good bar lies a manufacturing process that is chemically clearly defined and requires considerable artisanal experience: oils are saponified with lye, the soap mass is cooked, washed, poured, cut, stamped and then dried and cured for many months. Anyone wishing to understand why two pieces of Aleppo soap can feel so different despite similar ingredients must understand the steps in between.

In this article we follow the path step by step — from the lye to the curing cellar. This is not about romanticised images but about origin, craftsmanship and verifiable quality attributes: which raw materials are used traditionally? What happens during saponification (i.e. the chemical reaction of fat and lye to form soap)? Why is laurel oil often added only at the end? And what does the long curing time of 6 to 24 months actually change?

What „genuine“ means for Aleppo soap — without legends

The term „Aleppo“ is used very differently today. Historically it refers to a soap tradition from northern Syria in which olive oil (as the base fat) and laurel oil (for specific properties and the typical character) are processed in a hot saponification. „Hot saponification“ means: the soap mass is cooked in the kettle until saponification is largely complete. This differs from many modern small-batch soaps produced as a „cold process“, where the reaction takes place predominantly in the mold.

„Genuine“ in this context primarily means: a clear, typical raw-material base (olive oil and laurel oil), a production method that relies on cooking, washing/salting, pouring, cutting and long curing, and a product appearance that matches this (e.g. a two-toned cross-section produced by oxidation and drying). At the same time it is important to remain culturally sensitive: because of war, migration and changed supply chains, traditional methods are now also used outside Aleppo — often by people who brought the craft from Syria. The manufacturing process can be very similar; the indication of origin is nevertheless a separate point that should be considered independently.

The raw materials at a glance: olive oil, laurel oil, water, lye

Traditionally, Aleppo soap is based on few ingredients. This reduction makes raw-material quality highly visible: there are no fragrance blends, no colorants and usually no long lists of additives that could mask variations.

Olive oil: base fat, structure and mild lather

Olive oil provides the majority of the fatty acids that will later form the soap. In practice, origin, age and storage of the oil influence how the soap paste behaves: viscosity, reaction speed and the eventual skin feel can vary. In historical contexts, culinary-grade oil was not necessarily used; what mattered was that the oil was stable and processable. For consumers, the marketing category is less important than the question: is the soap cleanly saponified, well cured and free of off-odors that could indicate poor or overly aged oil?

Laurel oil: character, scent profile and formulation flexibility

Laurel oil (often from Laurus nobilis) is added to Aleppo soaps according to the recipe proportion. This proportion is often communicated as a percentage (e.g. 5 %, 20 %, 40 %). Important: percentage figures are only helpful if the laurel oil used is actually laurel oil and not a misidentification or dilution. Laurel oil typically has a strong, herbal, partly resinous aroma profile. Depending on pressing and filtering method as well as age it can vary considerably.

From a manufacturer’s perspective laurel oil is also more “sensitive” than olive oil: it is aromatic, can oxidize more quickly and is more expensive. For that reason it is often incorporated in the traditional process only towards the end of the cooking, once the main saponification has already taken place. This preserves more of the characteristic profile and prevents the raw material from being heated unnecessarily long.

Water and lye: the chemical key

The lye is the alkaline solution that triggers saponification. In modern production sodium hydroxide (NaOH) is usually used for this, commonly referred to in everyday language as “caustic soda”. Sodium hydroxide is not an “additive” intended to remain in the finished soap, but a reaction partner: with a correct formulation and a clean process it is consumed and converted into soap. Water serves as the carrier and process medium: it enables mixing, cooking and the subsequent washing/salting.

Historically there were methods to obtain alkaline solutions from ash or soda-containing raw materials. In practice the reproducible quality of modern lye is one of the reasons processes can be controlled better today. “Control” here means: predictable saponification, fewer faulty batches and a more stable safety profile.

Step 1: Preparing the lye – why precision is critical

Preparing the lye is the moment when craft and chemistry directly meet. For a safe and high-quality soap concentration, temperature and mixing behavior must be correct. Even small deviations can become noticeable later: excessive over-alkalization results in an overly caustic, “stinging” soap, under-alkalization can produce greasy, unstable bars that turn rancid or develop unpleasant odors.

Professional manufacturers therefore work with:

  • defined formulations (oil quantities and lye quantities in reliable ratios),
  • temperature control (too hot or too cold affects the emulsion and reaction progress),
  • batch logic (documentation so that variations remain traceable).

For readers the result is more important than laboratory logic: a well-made Aleppo soap does not feel “caustic”, does not burn intact skin and shows no conspicuous lye pockets or crystalline efflorescence that would indicate process errors.

Step 2: Combining oils and lye – start of saponification

When oils and lye come together, saponification begins: fats (chemically: triglycerides) react with sodium hydroxide to form sodium salts of fatty acids (which is soap) and glycerin. In traditional Aleppo soap glycerin generally remains in the soap and can contribute to the skin feel.

Clean mixing is important. In the kettle an emulsion initially forms, which thickens as the reaction progresses. Craftsmanship is apparent in how quickly and how uniformly this phase is reached—without components settling out or “breaking”.

Step 3: Cooking in the kettle – the classical hot saponification

The kettle cooking is the backbone of traditional Aleppo soap production. Over hours to days the soap mass is held at elevated temperature. The goal is a largely completed saponification and a homogeneous soap paste. This process control is energy-intensive and requires attention: too much heat can impair the aroma profile of sensitive raw materials; too little processing time can leave the reaction incomplete.

At this stage nothing is being „gimmicked“, but stabilized: by boiling and stirring water content, emulsion state and reaction progress are brought into a condition that allows later pouring and cutting. Many quality differences felt in the finished bar (consistency, lather, rinsing behavior) are predetermined here.

Step 4: Washing and salting – why the soap mass is „cleaned“

A typical element of traditional procedures is washing or salting the soap mass. The soap is treated with water and saline solution so that certain components separate: soap can flocculate and float to the top while heavier phases (e.g., lye residues, impurities, excess water) remain at the bottom. This step serves process purity and helps produce a more uniform, milder soap.

You can think of it as an artisanal clarification: the mass is not perfumed or „beautified“, but structurally brought into a more stable state. This matters for later use, because a properly salted and well-poured soap tends to be less irritating and more uniform as a bar.

Step 5: Incorporating laurel oil – intentionally late in the process

In many workshop traditions laurel oil is only added toward the end of the cooking. There are several reasons for this:

  • Protecting the fragrance profile: aromatic components volatilize under prolonged heat.
  • Process control: the main saponification of the olive oil is by then already stable, reducing the „window“ for unwanted reactions.
  • Raw material economy: an expensive ingredient is not exposed to unnecessary process stress for longer than needed.

It is important to have a realistic expectation: even with a high laurel oil content a matured Aleppo soap does not have to „smell strong.“ Fragrance changes over months. Furthermore, laurel oil smells differently depending on origin and age. A very faint scent can therefore have several causes – from a RESTrained formulation to oxidized or heavily filtered oil.

Step 6: Pouring onto the floor or into molds – the soap slab is formed

After the kettle phase the soap mass is poured. Traditionally this often happens onto large, smooth surfaces (e.g., suitable floor areas) so that a thick soap slab is formed. Alternatively, large molds are also used today. The decisive factor is uniform thickness, because that determines how well it can be cut later and how the pieces dry.

At this stage the physical development already begins: the mass cools, becomes firmer and slowly loses water. This is not „maturation“ in the cosmetic sense, but initially a stabilization of the material so that defined pieces can be produced.

Step 7: Cutting, Stamping, Turning – Craftsmanship visible in each bar

When the soap slab is firm enough, it is cut. The typical block shape is not a design gimmick but a consequence of the production process: large slabs can be efficiently divided into uniform pieces. Afterwards many pieces are stamped. The soap stamp can be a manufacturer’s mark, lettering or an emblem and serves primarily for identification.

For buyers several characteristics are of interest here:

  • Edges and cut appearance: Hand-cut pieces often have slight irregularities; this is not automatically a sign of inferior quality.
  • Stamping: A stamp is not proof of origin, but an indicator of batch identity and workshop practice.
  • Surface: Small pores or fine cracks can arise from drying. It becomes problematic mainly with greasy surfaces, pronounced blooming, or distinct lye spots.

Important: „perfectly molded“ can be industrial as well as very cleanly handcrafted. Conversely, „rustic“ is not proof of quality. What matters is whether the bar is stable, smells clean, and behaves predictably during use.

Step 8: Drying and Curing – why genuine Aleppo soap needs time

The long curing time is one of the best-known characteristics. „Curing“ here primarily means: water evaporates, the soap becomes harder, milder and more economical. At the same time slow oxidation and structural processes take place that shape the typical appearance.

Many Aleppo soaps develop a brownish layer on the outside after extended curing, while the interior remains greenish. This is not a dye effect but related to oxidation and drying: the exterior is exposed to air and light for longer. The interior remains in a different state longer due to lower exposure to oxygen and light. How pronounced this contrast is depends on the recipe, storage conditions and time.

What must be controlled in the curing cellar (or drying room)

Curing is not „leaving soap to sit“, but inventory management. A curing cellar or drying room must be designed so that many bars remain stable over months:

  • Air circulation: so moisture can escape evenly and no damp zones form.
  • Temperature and humidity: extreme fluctuations promote cracks, warping or uneven drying.
  • Pest and dust protection: storage hygiene is part of quality, especially over long periods.
  • Stacking logic: bars are often stacked or arranged in „towers“ so as many surfaces as possible are exposed to the air.

For end customers this later becomes noticeable as „handling“: Well-cured soap is hard, lasts longer, does not soften as quickly in home storage and can be dried cleanly.

Quality attributes you can check on the finished bar

Many questions about production cannot be answered by the naked eye. Nevertheless there are practical checks that work without a laboratory and indirectly reflect manufacturing quality.

1) Ingredient list (INCI) and labeling

The INCI list is the binding nomenclature for cosmetic ingredients. For Aleppo soap it should be short. Typical entries are, for example, saponified olive oil and saponified laurel oil. Depending on labeling style this can appear as „Sodium Olivate“ and „Sodium Laurelate“ (i.e. the sodium salts of the oils), supplemented by „Aqua“ and, where applicable, „Glycerin“. The important point is not whether „lye“ is written out, but that the components are plausible and no unnecessary additives dilute the character.

2) Smell: clean, not „old“ or pungent

A certain herbal laurel character is common, but not always strong. Warning signs are more: rancid, greasy or „cellar-like“ notes that may indicate oxidized oils or incorrect storage. A slightly earthy curing smell can, however, be normal — curing alters the profile.

3) Hardness and longevity

A cured Aleppo soap feels dry and hard. It yields only minimally to pressure. Very soft bars can simply be young or improperly stored. For use this means: the harder and drier, the longer the bar typically lasts in the bathroom.

4) Cut surface and two-tone appearance

The often-mentioned brown outer layer with a greenish interior is a typical effect, but not an absolute stamp of authenticity. Some soaps cure differently, some are stored differently, and formulations can shift the color. Still: a plausible cut surface, no smeary zones and no conspicuous inclusions are more indicative of a controlled process.

Common misconceptions: What Aleppo soap does not automatically imply

There are many simplifying statements circulating about Aleppo soap. Some of these are understandable because the soap is for many people an alternative to heavily perfumed, surfactant-rich products. Still, a sober assessment is worthwhile.

„Natural product“ does not mean „suitable for every skin at all times“

Soap is alkaline. That is not an error but part of its function. Nevertheless, very frequent washing or a high laurel-oil content can lead to dryness or a feeling of tightness for some skin types. A high laurel-oil content is not automatically „better“

More laurel oil changes properties and price, but “better” depends on the goal: some prefer milder, olive-oil-forward soaps; others appreciate the stronger character. Moreover, a percentage figure says nothing about the quality of the laurel oil or the care taken during curing.

“Handmade” is not a substitute for process cleanliness

Even artisanal production requires clean raw materials, safe lye management, controlled cooking and proper storage. A bar that is hand-cut can be excellent—or simply produced without control. That is why the inspection criteria described above are so important.

A brief look at origin and present: tradition under changed conditions

It would be disingenuous to describe Aleppo soap today as if there were only a single unchanged location and one production reality. Many traditional structures in Syria have been under severe strain for years. At the same time, the knowledge continues to exist—in families, workshops and new production sites. For consumers this means: origin, supply routes and processing can be complex. A reputable product communicates this complexity transparently (e.g. via clear importer information, traceable declarations and consistent quality) rather than relying on vague “original” claims.

Conclusion: understanding production means recognizing quality

Those who understand the production path can better assess genuine Aleppo soap: the lye is not a “problem substance”, but a necessary reaction partner. Kettle cooking ensures stable saponification. Washing and salting help clarify the mass. Cutting and stamping demonstrate workshop practice, but not automatically provenance. And long curing is not a marketing detail; it affects hardness, yield, scent and the characteristic two-tone appearance.

If, when buying, you pay attention to a short, plausible INCI list, a clean scent, adequate cure hardness and a consistent cut appearance, you will in practice typically make better decisions than by following buzzwords on the packaging. Above all, you gain a sense of why this soap has been valued for generations: not because of a legend, but because a clear process with few raw materials produces a robust, everyday-usable product.
